Perrone Serving Size : 6 Preparation Time :0:00 Categories : Sides Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 packages carrots -- sliced crosswise 3 large green peppers -- sliced lengthwise 3 large onions -- sliced thin 2 cups mushrooms -- sliced 1 stick butter or margarine -- substitute with Earth Balance Buttery Sticks Preheat oven to 325°. Parboil carrots for 5 minutes. While carrots are boiling, saute peppers, onions, and mushrooms in butter or margarine. Drain carrots. Place 1/3 carrots in flat, greased oblong pan, then layer with green pepper/onion/mushroom mixture. Continue to layer veggies twice more, ending with sauteed veggies on top.
