Did I forget to include it in the email? I'm such a ditz lately. Here it is though! »¿Apricot Nectar Cake 1 package yellow cake mix 3/4 C apricot nectar 3/4 c vegetable oil 1 tsp lemon extract 4 eggs Glaze: 1 C apricot nectar 2 C confectioners' sugar Preheat oven to 350 degrees. Grease and flour a tube pan. Mix all the cake ingredients. Pour batter into pan. Bake 1 hour, or until a toothpick inserted near the center comes out clean. Glaze: Combine the apricot nectar and the confectioners' sugar until there are no lumps. Pour the glaze over the hot cake, still in the pan, as soon as it comes out of the oven. Leave the cake in the pan overnight, covered with a towel, so the cake can absorb the glaze. Unmold before serving. Note: The apricot nectar comes in a 6-pack of tiny little cans.
