We used to have to wait in the breakfast room before going to the living room because Santa was not ready yet. wink wink. It really was pretty enjoyable waiting in the breakfast room because we were served mounds of cookies. My favorites were Ribbon Cookies. They taste great and make an impressive visual sight. I tweaked this recipe a lot. Grandma Lubbers' Ribbon Cookies Cream topgether: 2 cups ghee 2 1/2 cups organic sugar Add: 2 tsp. vanilla 2 egg replacer equivalent Add: 5 cups flour 3 tsp. baking powder 1 tsp. salt After the dough is well mixed, divide it into three equal parts in bowls. To the first pat add and mix 4 Tbsp. poppy seeds. To the second part, add 6 Tbsp. carob chips, melted. To the third part add 1/2 cup dried cherries or candied cherries. (recipe is below). Also add 1/4 cup coconut that is finely ground in coffee grinder. Line a 9 " x5 " x3 " bread pan with waxed paper. Put the poppy seed mixtre in the bottoms of the lined pan, then the carob mixture, and then the cherry - coconut mixture on top. Cover with waxed paper and put in refrigerator overnight or freezer for an hour or so.(Don't let it freeze). Make one cut lengthwise down center. Take out of pan and cut with serrated knife into 1/4 inch slices so each cookie has 3 ribbons. Place ribbons on lightly oiled cookie sheet. Bake at 400 degreesF fo 8-10 minutes until golden brown. Do not overbake. Candied Cherries Add to skillet. 6 oz. drained maraschino cherries ( recipe below) with 1/4 cup water in skillet, sprinkle evenly with 1/2 cup organic sugar. Cook & stir often 30 min or until glazed. Let stand in the syrup overnite. Place on a cheesecloth covered rack, cover with more cheesecloth. Let dry 2 days. Chop. Use or freeze. Homemade Maraschino Cherries Use medium saucepan and combine 1 cup water with 1 cup honey, 1/2 cup grape juice (red grape juice is best). 1 star anise pod or 1/4 tsp. fennel seeds and pinch of sea salt. Bring to boil and then simmer. Then add fresh cherries with stems. I used frozen cherries, 3 Tbsp. fresh lemon juice and 1 tsp of pure almond extract and simmer until cherries are tender, roughly 5 minutes. Let cherries cool, put in a jar and refrigerate.
