It is very simple but the flavor of the parsnips really shines. Parsnip Puree 4 medium sized parsnips 1/2 cup milk or light cream 2 Tbsp butter 1/2 tsp salt pinch of freshly grated nutmeg (ground nutmeg is fine) pepper to taste Pare the parsnips and cut into one inch slices. Cover them with water and boil 10 minutes. Pour the milk or cream into the blender. Drain the cooked parsnips and place in a blender along with the butter and seasonings.
