Guest guest Posted December 20, 2006 Report Share Posted December 20, 2006 Brown Sugar Fudge 1 cup firmly packed light brown sugar 1 cup white sugar 3/4 cup evaporated milk 1 T. butter 1 tsp. vanilla 1/2 cup pecans or walnuts (optional) Combine sugars and milk in a saucepan, cook over low heat until sugars dissolve, then increase heat to medium and boil to soft ball stage (234-240 degrees), stirring occasionally. Remove from heat, stir in butter and vanilla. Place pan in sink of cool water to stop cooking. (The mixture may look curdled but will smooth out when beaten. Beat until very thick. (Mixer can be used but be careful and not over-beat). Add nuts and pour into greased 8 " square pan.
