Guest guest Posted December 19, 2006 Report Share Posted December 19, 2006 This is one of my favorite cookies. From " Let's Start to Cook " by the Food Editors of Farm Journal, published in 1966. Orange Coconut Crisps 2 eggs or equivalent egg substitute (I've used both Ener-g and flax seed egg substitutes with good results) 2/3 cup canola oil 1 cup sugar 1/4 cup frozen orange juice concentrate, thawed 2 1/2 cups sifted flour 2 teaspoons baking powder 1/2 teaspoon salt 1 cup dried grated coconut 1. Start heating the oven to 400F. 2. Beat the eggs with a fork or a wire whisk in a medium bowl. Stir in the oil and sugar and beat until the mixture thickens. Stir in the orange juice concentrate. 3. Sift the flour into another bowl and then measure. Sift the measured flour with the baking powder and salt. Add with the coconut to the egg mixture. 4. Drop teaspoons of dough about 2 inches apart onto an ungreased baking sheet. Press each cookie flat with the bottom of a drinking glass, oiled lightly and dipped in sugar. Dip the glass in sugar before flattening each cookie. Bake on the rack in the center of the oven 8 to 10 minutes or until the cookies are a delicate brown. Watch carefully, the bottoms will darken quickly. 5. Remove the baking sheet from the oven and remove the cookies with a wide spatula. Transfer to a wire rack to cool.
