Guest guest Posted December 18, 2006 Report Share Posted December 18, 2006 I made this for the first time Saturday to bring to the " House Lighting " at the home of a Church member (Phyllis). It's a UU Church so we have a great cross sections of religious beliefs as most all came from varied upbringings. The talk of Christmas and what it means from the Christiin view, hannakah was the central topic now that we are in thie Hannakah season. There was a Canter from a local Synagog there the weekend of Yom Kippor. The canter closed the service with the Kol Nidre, a loved prayer sung the veve of Yom Kippor. No single religion is preached, just love and respect for everyone. Alyssia's Vegan Lockschen Kugel Ingredients 1 pound (16 oz) 8 oz Jerusalem Artichoke Spinach Fettuchcine 8 oz Jerusalem Artichoke Fettuchcine (I use Organic for both, your option) 1 Pound Leasa Brand (Refrigerated) Firm Tofu 14 oz Nasoya Brand (Refrigerated) Firm Tofu [i avoid the boxed tofu you find on the grocer's shelves. The tase to me is no where near as good. If I had that one first, I may have been one of this who say they do not like tofu ] 1 15oz(+/-) can Crushed Pineapple (in pineapple juice ... NOT syrup) 7 Tbls Agar (available in most any health food store) 1/2 cup Unrefined Brown Sugar 1 Tbs Real Vanilla Extract 1 Tbs Apple Pie Spice 1/2 Tbs Cinnamon 1 cup Raisins --- Pam 3 " 9x13 glass (never aluminum *) baking dish (2 " will also fit this, but to the top) Large glass or stainless Mixing bowl Stainless strrl pot (to boil noodles) Method: [pre-heat oven to 350 deg F, or 176.7 C] 1- Boil noodles in accordance with package directions to soft, rince in cold water (keep in cold water if mix is not ready) collender opff water ... add to mix (below) and spoon mix till even consistancy is reached 2- Blend the Tofu with the brown sugar & the liquid from the pinapple, pour into mixing bowl. Add the crushed pineapple and spoon mix till evenly distributed. Add the remsinder .. agar, spices, vanilla, etc. Spoon mix again till distributed evenly. 3- Add noodles after collendering off excess water (#1 above). Spoon mix till even consistancy is reached. 4- Spray a 3 " - 9x13 glass baking dish with Pan and wipe off excess 5- Pour noodle mix into pan and smooth out evenly 6- Bake at 350 deg F (176.7 C ) for one hour or untill top is slightly browned and the sides have browned 7- Let stand long enough for the eggs to bind the kugel (5 min +/-) . Slice into main course side-dish portions and serve warm. (*) Aluminum. Besides being associated to Alzheimers, Parkenson's and a few other brain related diseases, using aluminum to cook in, especially baking something like this, will give a metal taste to the finished kuggel. If your not accostomed to things cooked in those supermarket 1-time baking pans you will taste the difference. Sort of like the person that smokes in their home and during a meal, or the non-smoker eating in a smoke filled environment. You think you can taste what you are eating, but in reality one does not taste what the food actually tastes like. Why ? Your taste buds are in your nose, not your mouth.
