Guest guest Posted December 17, 2006 Report Share Posted December 17, 2006 Plantains with Balsamic Basil Sauce 1 cup balsamic vinegar 2 tablespoons butter, melted 2 tablespoons honey 2 tablespoons fresh basil, chopped 1/2 teaspoon salt 4 plantains, ripe and peeled vegetable cooking spray Prepare grill. In a small saucepan, add vinegar. Bring to a boil; cook until reduced to a 1/4 cup, about 5 minutes. In a small bowl, combine vinegar, butter, honey, basil, and salt in a small bowl. Coat grill rack with cooking spray. Grill plantains until tender, 10 minutes, continuously basting with vinegar mixture. Cut plantains in half diagonally and serve. serves 8.
