Here is my vegetarian version (there is no one authentic paella, in Spain it can be seafood, chicken, pork, rabbit, a combination, or just vegetables as well, and yes, they are all authentic). what makes a paella to me is the rice and the saffron. Vegetable paella 4 cups Arborio rice 5-6 cups vegetable broth White wine (1-2 cups) 3-4 ripe peeled and chopped fresh tomatoes 1-2 minced onions 4-5 minced garlic cloves Salt to taste Olive oil for sauteeing Artichoke hearts (1-2 cups) Roasted and peeled peppers (red if available) Green peas Other seasonal vegetables: asparagus, summer or winter squash, eggplant, snow peas, green beans, cauliflower, mushrooms etc. Optional: seitan or gluten, arame seaweed. Picada: minced roasted almond (3 tbsp) ½ minced parsley, 4 cloves minced garlic, saffron (1 oz). Pound in mortar and pestle. Add to paella when rice is ½ cooked and has not absorbed all water yet. To begin, using clay pot (cassola) or a paella pan, sauté minced onions in olive oil, add tomatoes and garlic, and diced bell peppers. Add salt to taste and cook until a sauce is formed, adding white wine as needed. Add rice and sauté, adding remaining uncooked vegetables and water or broth (double the volume of rice- or a little less if using lots of moist vegetables). Add cooked vegetables and picada half way trough cooking, and place clay pot in oven at 350 F for last 10-15 minutes of cooking. Serve with a fresh batch of all i oli. All i oli is a garlic olive oil salt mayo type of thing. It is catalan even though people claim it as french. The Catalan region does extend into France, so I guess it is both french and Spanish. OK, I'll post now to not make it too long and I also have the nut loaf recipe available (next post).
