Guest guest Posted December 15, 2006 Report Share Posted December 15, 2006 @@@@@ Orange Rice Pilaf with Dried Fruit - 2 pts 3/4 cup chopped dried apricots, cherries or cranberries, or a combination 1/3 cup raisins 1 1/2 cups quick-cooking brown rice 3 Tbsp. chopped fresh flat leaf parsley, or 1 Tbsp. dried 2 tsp. orange zest Fat-free, reduced sodium broth Put dried fruits and raisins in small bowl. Add hot water to cover, and let soak for 5-10 minutes, then drain. In large saucepan, cook rice with fruits, parsley and zest in broth per package instructions. Remove pilaf from heat and gently toss with fork before serving. Makes 6 servings. Per serving: 152 calories, 1 g total fat (>1 g saturated fat), 34 g carbohydrates, 4 g protein, 3 g dietary fiber, 158 mg sodium.
