Guest guest Posted December 15, 2006 Report Share Posted December 15, 2006 @@@@@ AICR Walnut Chutney - 4 pts 1 Golden Delicious apple, peeled, cored and finely chopped 1 cup chopped onion 2/3 cup walnuts, chopped 2 Turkish dried figs, chopped 1/3 cup pitted dates, chopped 1/4 cup golden raisins 1/2 cup dark brown sugar, firmly packed 1 tsp. ground cinnamon 1 tsp. grated fresh ginger 1/2 tsp. grated orange zest 1/4 tsp. ground allspice 1/4 tsp. red pepper flakes 1/2 cup apple juice 1/2 cup apple cider vinegar Combine all the ingredients in a deep, medium saucepan. Cover and bring to a boil. Stir to combine the ingredients and cook, uncovered, at a gentle simmer until the mixture becomes “gloppy” like most chutneys and plops from a spoon, about 30 minutes. Transfer the mixture into 2 clean 1-cup glass jars, cover tightly and cool to room temperature. Store in the refrigerator. Makes 8 generous (1/4-cup) servings, or 16 if used in more modest (2 Tbsp.) portions. Note: For a large crowd, or to make as gifts, double the recipe, which makes 2 cups, but increase the liquids only to 3/4 cup each and allow more cooking time. Per 1/4-cup serving: 192 calories, 7 g. total fat (less than 1 g. saturated fat), 34 g. carbohydrate, 2 g. protein, 3 g. dietary fiber, 11 mg. sodium.
