Guest guest Posted December 15, 2006 Report Share Posted December 15, 2006 Bulgur Chickpea Salad: 1 1/4 cups water 1 cup bulgur 1 teaspoon parsley 1 teaspoon low sodium soy sauce 1 teaspoon minced onion 1/2 cup chopped scallions 1/2 cup raisins 1/2 cup chopped carrots Dressing: 2 Tablespoons oil 2 Tablespoons lemon juice 1 Tablespoon low sodium soy sauce 1 garlic clove minced 1. Bring water to a boil add bulgur, soy sauce, minced onion and soy sauce. 2. Cover and reduce heat until all water is absorbed about 15 minutes 3. Allow bulgur to cool and make up dressing. Toss and allow to cool.
