Roasted Acorn squash stuffed and cheese tortellini. 2 acorn squash, halved and de-seeded Bake these. The recipe called to drizzle them with oil, I don't need the extra calories and I love squash the way they are so I skipped this. Cook 1 lb cheese tortellini, toss it with an alfredo sauce. Their recipe was: 2 C heavy cream (I used 1/2 & 1/2, ordinarily I'd use whole milk or even 2%, but DD used all the whole milk in her sherbert) 1 garlic clove, minced. Or garlic to taste 1 sprig Thyme 1 C grated fresh parmesan 1/8 tsp grated nutmeg Kosher salt (or Celtic if you're Donna <wink>) fresh ground black pepper to taste Stuff the squash with the tortellini tossed with the sauce.
