Yankee Molasses Puffs (vegan)

 

3 cups plain/all purpose flour

1/2 teaspoon salt

1 teaspoon cinnamon

1 teaspoon ginger

1 teaspoon nutmeg

1 teaspoon allspice

1/2 cup vegetable margarine

1/2 cup soft brown sugar

4 tablespoons soy milk

3/4 cup molasses

1 tablespoon lemon juice

2 teaspoons baking soda

1/2 cup boiling water

brown sugar for sprinkling

 

Preheat the oven to 350°F

 

Sift together the flour, salt and spices. Cream the margarine, sugar and Soya

milk. Gradually add the dry ingredients. Add the molasses and lemon juice.

Dissolve the baking soda in the water and add to the mixture, add a little extra

flour if necessary.

 

Drop by teaspoonfuls on a greased baking tray and sprinkle with sugar. Bake for

8-10 minutes. Leave a few minutes and transfer to a wire rack to cool.
