Vegan Chocolate Chip Bars

 

3/4 cup brown sugar

3/4 cup white sugar (can use raw sugar)

1 cup oil

1/3 cup tofu

2 T water

1 tsp vanilla

3 1/2 cups unbleached white flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup chocolate chips

 

Preheat oven to 350F.

Cream together brown sugar, white sugar and oil. In a blender, blend the tofu,

water and vanilla, and add to the sugar and oil.

 

In a bowl mix together the flour, baking powder, baking soda, and salt. Mix with

the wet ingredients, and fold in the chocolate chips.

 

Press into a 9 x 13 inch (23 x 38 cm) pan and bake 10-12 minutes (I had to bake

them for much longer). Cool and cut into 24 bars.

 

These are incredibly rich and yummy! It's great fun to shock people when you

reveal the bars contain tofu.
