I'm thinking now to chop and add it to my lunch-time burritos to give them that chewy texture. This is a great idea! I agree that adding hominy to soups really makes them good! Another thing that my mom does with hominy is that when she makes the corn casserole or corn pudding as some call it, she uses half corn and half hominy. VERY good!
