Never a problem. Just the other day I made the all bran muffins (the original ones from the All Bran box) that was posted recently...added raisins, chopped walnuts, ground flax seeds, used whole wheat flour instead of white, (calls for an egg, but I used Egg Beaters) and topped them with whole oats before baking. Made a dense, moist, breakfast muffin. Going to be one of my favorites. Very filling and you're not looking for something to eat in a half hour. I find that baking is a bit more difficult. I know that I can substitute applesauce for the oil but was wondering, since I haven't tried it yet, if soy milk works well in baking foods such as muffins. I've made cakes & quick breads so far. How funny, I'm on a similar quest for breakfast muffins too I made the pumpkin spice muffins from the files yesterday and they are very tasty. Check the Bread folder & the muffin file -- not all are vegan but many are. I'm wondering - can tofu instead of applesauce be subbed for oil?
