I think this reflects the difference between American and British diets. I believe that you tend to eat more flashy desserts which perhaps need tofu to reproduce them for a vegan diet whilst we eat more fuit pies, crumbles or cakes and puddings that can be created using egg replacer rather than tofu. I think that vegetarians and vegans in the US tend to eat a lot more soya products than has been usual here. I eat tofu perhaps 6 times a year and I don't take soya milk.
