Cabbage Casserole

 

4 cups. coarsely shredded cabbage

1 16 oz. can tomatoes, undrained

2 tsps. sugar

1 tsp. salt

1 tsp. oregano

salt and pepper to taste

1/2 cup grated cheddar cheese

1 cup bread crumbs, finely ground

 

Cook cabbage in boiling water, til wilted -- about 5-6 minutes.

Drain well.

Combine tomatoes, sugar and oregano, gently break up tomatoes.

In a greased (I use non-stick spray) baking dish, place cabbage

sprinkled with salt and pepper, covered with tomatoe mixture, then

cheese, then crumbs.

Bake uncovered for 30 minutes in a 350 degree oven, or till heated

thoroughly.

Makes 4 to 6 servings.
