On the plus side, vegan foods do not go bad as fast as things with lots of fats and oils in them, so you can take almost anything. The down side is that fresh veggies don't do too well if it gets very hot, so dried veggies come in handy. Dried hummus (just mix with water) works great for lunch-time sandwiches. I guess, like with meat- based foods for backpacking, the key is dried foods (IMO, anyway). Several companies even make veggie/vegan dried meals, to which you merely add hot water and cook a bit. I am a big fan of couscous myself. Can't forget the Clif Bars, of course. Hopefully that helps. If not, I can be much more detailed (painfully so), if you wish.
