SPECIAL CORN BREAD RECIPE.

This is a very special corn bread recipe. Really made my day. A friend shared

this recipe, saw him eating this at lunch and asked questions. (It is very good

and VITAL to observe at lunch and ask questions to someone who makes their own

food. They are usually proud to share their recipe. This way there is a lot to

learn/gain. Besides, it is a great way to strike a conversation and make

friends/break the ice etc., This is how I got my recipe.)

 

1 Cup Corn Meal

1 Cup all purpose flour

10 Oz Creamed Corn

1/2 tsp baking SODA

3 Tablespoons of Olive Oil

1 tsp salt

1 Onion cut into small pieces

2 Red Peppers

4 Jalapeno Peppers

 

Mix all dry ingredients first, then the wet ingredients, finally the veggies and

then bake at 375C for 45-60 mts. I just made this took it out of the oven and

then tasted a slice. It tasted so delicious and hence decided to type all this

and share the recipe here immediately.

 

PERSONAL MODIFICATIONS: As usual I modified the recipe a little bit. Also added,

3 tsp of garlic powder, replaced onion with 2 tsp of onion powder, 2 tsp of

crushed red chilli peppers, 3 tsp of sliced olives and a handfull of cut

coriander leaves.

 

There is no smell of soda as the spices etc., also help to mask this smell, easy

mixing and tastes very special.

 

DRAWBACK: Only drawback is that the corn meal is expensive and not as frugal

compared to a lot of the otehr ingredients.
