My name is Cassandra and I have been a vegetarian for 6 years and have recently become a vegan as of a month ago. So this will be my first holiday season as a vegan...almost wish I could have waited until after Christmas but when your heart says it is time you follow it :-) I am already signing up for some holiday potlucks and am curious....what are some of your favorite WOW them meals. you know the ones you can take that meat eaters will go.... Yummmmmy! Title: Fruited Wild Rice Stuffing Description: Here is the recipe as I found it, but I used 1 cup of wild rice; 1 orange, sliced; 1 apple, cubed; and a little over half a cup of cranberries. I also left out the nuts. And I cooked all the rice beforehand in my rice cooker. Ingredients: 1/4 cup cognac or orange juice 1/2 cup raisins 1/2 cup wild rice 1 cup brown rice blend 1/2 cup butter, melted (I obviously used a vegan substitute for this...) 2 small shallots, minced 1 cup fresh orange segments, sliced 1/2 cup fresh cranberries 1/2 cup fresh apple chunks 1/2 tsp. cinnamon 1/4 tsp. cardamom 1/4 tsp. cloves 1/4 tsp. rosemary 1 cup breadcrumbs 1/4 cup orange juice 1 tbsp. balsamic vinegar 1/2 cups chopped walnuts or pecans Directions: 1. Bring raisins and cognac to a boil. Remove from heat and allow to sit for 30 minutes. 2. Add wild rice to 2 cups boiling salted water, reduce heat and simmer covered for about 50-60 minutes. 3. In a different pan, add brown rice to 2 cups boiling water and reduce heat, cover and simmer for 45 minutes. 4. In a saucepan, melt butter and lightly saute shallots and celery. Add cranberries, apple, oranges and spices and cook for 3 minutes. Add breadcrumbs. Mix in orange juice and balsamic vinegar, then toss with the cooked rices, raisins and nuts. 5. You can also bake this stuffing in a covered casserole dish for 50 minutes in a preheated 325F oven. Remove the cover for the last 10 minutes of baking. As for potlucks I think cashew and mushroom tart is a good one - either hot or cold.
