Guest guest
I saw this soup in Food and Wine magazine, and since it was vegan I decided to try it. It was highly recommended by the senior editor "Aside from lime drink, this was the only thing I wanted while I was recovering from a bug I caught in India. I could eat it forever" I made it today and it was amazing, so flavorful, I just love it!~ Spicy Tomato Soup 1 3/4 poound ripe tomatoes 2 TBSP vegetable oil 1 teaspoono mustard seeds 1 medium onion, finely chopped 1 teaspoon cumin 1/2 teaspoon coriander 1/4 teaspoon turmeric 2 dried red chiles 1/4 cup red lentils 6 cups water salt Peel and mince the tomatoes. Heat the oil in a medium saucepan. Add the mustard seeds, cover, amd cook over high heat until the seeds begin to pop. Reduce the heat to moderately low. When the popping stops, add the onion and cook, uncovered, stirring until softened, about 5 minutes. Add the cumin, coriander, turmeric, and chiles to the saucepan, and cook, stirring, until fragrant, about 1 minute. Stir in the lentils, tomatoes, and water, season with salt and bring to a boil. Simmer the soup over low heat until the lentils have fallen apart, about 45 minutes. No matter how far you have gone on the wrong road, turn back. -Turkish proverbFact: Each gallon of gas used by a car contributes almost 20 pounds of carbon dioxide to the atmosphere. A single car driving 1,000 miles a month adds up to 120 tons of CO2 annually. Guest guest
It sounds good - and with the lentils would make a main meal.
