Guest guest Posted December 21, 2008 Report Share Posted December 21, 2008 If you haven't thought of what to prepare for the holidays, or if you haven't browsed through the list recipe files, here are two mock turkey recipes to spark your imagination. The first recipe here is a simple one I have used for decades. The second is a more complex one I came across a few years ago. MOCK TURKEY 1 bunch celery 1 green onion parsley to taste 1 cup almonds or pecans 1 avocado sage to taste * Grind celery, green onion, and parsley in a food processor. Drain off juice (save for soup). * Finely grind almonds (or pecans) in blender or nutmill. * Mash avocado with a fork until well-mashed. * Add nuts, avocado, and sage to celery mixture. * Shape into patties with a spoon, and serve on a lettuce leaf. * Serve with cranberry sauce MOCK TURKEY adapted from a recipe at chidiet.com 6 C walnuts 5 stalks celery 2 lg. carrots 1 med. onion 2 cloves garlic 1/4 C flaxseed oil 1/4 C dried sage 2 T fresh thyme 2 T fresh rosemary 1/2 C fresh parsley 1/4 C miso 2 t sea salt 1 T poultry seasoning (optional) 1 avocado * In a Champion juicer, using the blank plate, process walnuts, miso, flaxseed oil (Alternatively, process fine in a food processor). Remove to a bowl. * Process celery, carrots, and onion in the food processor, and add to walnut/miso mixture. * Add remaining ingredients, save fresh herbs to the bowl, and mix thoroughly by hand. * Mold the mixture into a pleasing shape (or, perhaps, a turkey shape) on a platter. * Garnish with sprigs of rosemary and thyme.
