Truth about Low Fat Vegan Diets

 

Can anything be more boring than eating a low fat

vegan diet? What would life be without French-fried

potatoes or avocado salads without three tablespoons

of extra-virgin olive oil and Balsamic vinegar?

 

Doctors like Doug Graham live by a low fat vegan diet:

Cardiologists like Caldwell Esselstyn have put heart

attack patients on long term low fat vegan diets and

The February, 2008 issue of the Journal of the

American Dietetic Association (108(2):347-56) reports:

 

" A very-low-fat vegan diet increases intake of

protective dietary factors and decreases intake of

pathogenic dietary factors. "

 

Research scientists conclude:

 

" There is increasing evidence that dietary factors

in plant-based diets are important in the prevention

of chronic disease. "

 

Just three days after placing Ninety-three prostate

cancer patients on a low fat vegan diet, scientists found:

 

(1) fiber increased from a mean of 31 to 59 g/day,

(2) lycopene increased from 8,693 to 34,464 mug/day)

(3) saturated fatty acids decreased from 20 to 5 g/day

(4) cholesterol decreased from 200 to 10 mg/day)

 

STUDY CONCLUSION:

 

" These results suggest that a very-low-fat vegan diet

can be useful in increasing intake of protective

nutrients and phytochemicals and minimizing intake of

dietary factors implicated in several chronic diseases. "
