Cause Drowsiness?

During the next week you'll be reading columns

warning turkey eaters that tryptophan will bring

on post turkey-dinner lethargy. Many will joke,

" Don't eat turkey before operating heavy machinery. "

Over the years, I've heard from many hundreds of

people who, after eating cheese, also get sleepy.

Is there a link between turkey and cheese?

Doctors are often rewarded by having techniques or

diseases named after them. Dr. Heimlich has his maneuver.

Dr. Alzheimer has his brain disease. Dr. Constipa had...

well, enough of that.

In the best interests of science, I am revealing that

cheese eaters get tired for the exact same reason that

turkey eaters do. Got tryptophan? Since I am the first

to report this, it becomes my option of naming this

phenomenon after myself, so from here on, please refer

to this condition as the " Notmilkman Effect. "

There was a time when tryptophan supplements were

used by insomniacs. Pop a pill and go right to sleep.

In 1990, the food and drug administration took

tryptophan products off the market after a few

dozen deaths were reported. More than 5,000 people

got seriously ill after ingesting tryptophan. Some

were diagnosed with eosinophilic-myalgia, a syndrome

in which extreme muscle pain leads to serious swelling

of their arms and legs.

I obtained data for the average tryptophan level in all

cuts of turkey by accessing the United States Department

of Agriculture Nutrient Database:

A 100-gram portion of turkey contains 0.31 gram of

tryptophan. For the sake of comparison, that number

will act as our baseline for examining tryptophan

levels in other foods.

Does Wisconsin's finest Cheddar cause more drowsiness

Will Parmesan cheese at dinner put you to sleep an hour

after watching reruns of The Sopranos? How about mozzarella?

Here's what you need to know about tryptophan levels

in 100 gram portions of food:

Turkey (all cuts) = 0.31 gram of tryptophan

Cheddar Cheese = 0.32 gram of tryptophan

Hard Goat Cheese = 0.32 gram of tryptophan

Parmesan Cheese = 0.48 gram of tryptophan

Mozzarella = 0.515

Holy pizza pie! Watch your local pizza man grab

20 ounces of mozzarella to produce his large pie.

Each slice will contain as much tryptophan as

a large turkey drumstick. Aside to the ladies:

If a " headache " is to be your excuse this evening,

feed your man pizza instead. Oh, no. Please don't

name that one after the Notmilkman: The Can't

Performitis Sin-drome.

Tofurkey? Sorry, those numbers aren't in yet. USDA has

not yet discovered the planet Vega, but they do list

Morinu soft tofu: .068 grams of tryptophan.

Advice for car owners: Don't eat cheese and operate

motor vehicles. If you do so, have one member of your

party assigned to be the designated non-cheese driver.

Pleasant dreams!

VEGGIE Turkey:

Adapted from the book The New Raw Energy, this is a favorite of mine, especially

at holiday times. It has a wonderful flavor and looks beautiful on the table.

1 cup cashews

1 cup pumpkin seeds

1/2 cup Brazil nuts

5 stalks celery

1 scallion (are onion greens wich will affect your flora: use Chinese parsley)

1 teaspoon sage

1 cup cranberries

Maple syrup (or the cheaper Chinese sliced brown sugar)

1. In a food processor or blender, grind the cashews, pumpkin seeds, and Brazil

nuts until fine.

2. Add the celery, scallion(parsley) , and sage and blend until smooth.

3. Remove from food processor and place on a large plate. Form into a loaf.

4. Blend the cranberries in blender. Add maple surup to taste. Blend until

smooth.

5. Spread cranberry sauce over the loaf.

Serving suggestion: Decorate the plate with whole cranberries and parsley.
