There was a book I used to have, " Instinctive Nutrition " that was about eating

everything, including meat, raw. There apparently is a group of folks in France

who practice this. It helps, and is perhaps essential, to have a butcher who is

sympathetic to your cause...Perhaps the Whole Foods butcher-guys would be....

As for meat-i have had that raw but decided that the only way I would

do that is if I raised & slaughtered it myself so I knew exactly what

went into that.

Carol Alt also does this--lightly searing the meat to seal in the juices.
