What to do with sprouts?/ A test and a commendation.

I just wanted to vouch for this amazing company that you mentioned, Katya:

For those of you wary of sprouting legumes, I highly recommend you try buying

their red

lentils and sprouting them until they have nice little tails. I find these

highly digestible.

 

Even Doug Graham, who decries lentils as full of toxins in their " natural state "

(it's true, bu

I think he means " dormant " ) admits that germination renders them perfectly

digestible. He

seems to think that germinated seeds are not in their " natural state, " which

perplexes me a

bit: when I walk out into the woods, I find little wild just-beginning-to-sprout

legumes all

over the place! If germinating were an unnatural occurence, how would plant life

sustain

itself?!

 

And keep in mind: germination does completely alter the nutritional profile of a

plant!

Most little seeds use of most of their protein and fat content (they use it to

grow!) in the

first 3 days of germination, and their vitamin content increases exponentially

after that.

 

To provide the control for this test, if you are interested, try buying bulk red

lentils from

your grocery store, sprout them and eat them. You may notice that most of the

lentils are

split in half. One half contains the sprout, the other does not. The half that

contains the

sprout germinates (with proper inducement: soaking, airing, rinsing), whereas

the other

half does not, resulting in a half-sprouted batch of lentils. If you eat these,

you may

indeed experience indigestion, as I have, I'm guessing because the

enzyme-inhibitors are

still ever-present in the unsprouted halves.

 

It makes me wonder, how often do people sprout and consume faulty or

inadequately

germinated legumes and then pronounce them categorically indigestible as a

result?
