His name is Chef Richard. Unfortunately, Disney doesn't know that there is much of a desire for RAW FOODS preparation so his skills are not being utilized. If you feel compelled, please contact disneyland directly and let them know you are interested in enjoying all the yummy RAW FOODS treats available while visiting their park.
