Making almond butter in Vita-Mix

My Aunt was kind enough to give me a Vita-Mix, but with no

directions. Can someone tell me if it will grind almonds? I want to

make my own almond butter.

 

Would I just dump the almonds in and turn it on high?

Beth,

 

You could just dump almonds into a Vitamix and turn it on high but you would

risk

damaging your blender and you would almost certainly cook your almonds in the

process

because the Vitamix gets hot quick when it is given difficult chores. I suggest

using a food

processor instead, if you have one. In a food processor it can take up to ten

minutes to get

a good nut butter consistency; if you want to preserve more enzymes, turn it on

for three

minutes, then let it sit for one, then turn it back on for another three

minutes, etc. Make

sure no water gets in there!

 

When I make almond butter, I always soak and dehydrate my almonds first, to

lower the

enzyme-inhibitor content, so that the almond butter is more digestible.
