" Just to clarify, the (usually) clear liquid in a coconut is generally called coconut " water " . Some may call it juice. Coconut " milk " is actually the resulting liquid of blending the mature coconut " meat " and the water, then juicing it, removing the fibrous material. The milk is an amazing rich milky liquid, quite different from coconut water. The young coconut meat can be used for puddings and sauces.
