I found a recipe in the Doug Graham's book called figgy bliss using the milk from the coconut, but I have no idea what to do with the coconut " meat. " Any suggestions? Thanks! Elchanan had recently posted a recipe for a Coconut shake..you might try that… And whatever recipe you use the meat in, I note that it’s a very high fat food, With the meat from a medium coconut having About 1,400 calories with a calonutrient ratio Of 18%C, 3% Protein, 79%Fat; meaning that This amount of meat would have about 1,100 calories from fat.
