Hi Dale,

 

Use zucchini instead!!

 

Several years ago, Matt Samuelson, a graduate of Cherie Soria's Living Light

Culinary Arts Institute, created this wonderful hummus recipe. It looks,

feels, and tastes JUST like the " real " thing!!

 

Please note this is a high-fat recipe loaded with stimulants. Definitely

party food, at most.

RECIPE: Zucchini Hummus (No-Bean Hummus)

 

Obviously, this is NOT a mild, low-fat recipe. But it tastes, looks, and

feels like hummus without the beans. In fact, it may actually be the best

hummus I've ever had. Personally I'd go light on the garlic! :)

 

2 zucchini, cut in big chunks and process with S blade in food processor.

 

Add remaining ingredients and process until smooth:

 

¾ cup raw tahini (3/4 cup, in case destroys the fraction)

2-4 cloves garlic, pressed

½ cup lemon juice (1/2 cup, in case destroys the fraction)

1 t salt, to taste

1 t cumin

1 t paprika

dash cayenne

¾ cup sesame seeds, soaked and dried if possible (3/4 cup, in case

destroys the fraction)

Hi Gang - this may seem elementary but - does anyone make Hummus out of

sprouted Garbanzos beans - any suggestions?
