Soup: Cilantro Dumpling cream soup Salad: Spinach Paradise with Baby Spinach, Straberries, Raisins, Green Peppercorn and Agave Mustard Dressing. Appetizer: Aubergine Roussillon Small Eggplants delightfully filled with tomatoes, Red Bell Pepper, Leek, Parsley, Olives and Garlic, " gratine " with a Basque style Almond Cheese. Entrée: " Poached " style Mock Salmon on a bed of Fennel with Black Currant Sauce, served with Leek Béchamel and marinated Carrot Curls Dessert: Casata Siciliana Ricotta style Almond Cheese with Coconut, layered in thin crisp hempseed crust.
