The oil is always a refined food, another widely circulating " health " myth. The rest of the coconut is fine, of course, as long as it's not been dipped in fungicide or the like. The milk/meat are very high in fat (about 80-90% of calories, depending upon the maturity of the coconut), so this is at the extreme end of the spectrum as a high-fat food. In contrast, coconut water is an entirely different substance, with far fewer calories, of which only 9% are from fat. Coconut water resembles human blood plasma in certain respects and is an excellent food for our species. The meat, only in smaller quantities.
