(Some are organized in series, then I'll know which link to send you next.) Please don't misunderstand me. I'm not saying anyone " should " or " shouldn't " eat carrots (or anything else, for that matter). I'm merely pointing out that the human digestive system is optimized, by design, to process certain foods " better " than other foods. In general, foods high in water and soluble fiber and low in proteins, fats, starches, and insoluble fiber are processed " best " . By " best " , I simply mean maximum nutrition received in exchange for minimum utilization of energy and other resources to obtain that nutrition. In other words, I'm coming from a perspective of the " optimal " , to the extent that any human can approach such a way of living. I have never, ever, heard of anyone who contracted some chronic or degenerative disease from eating carrots. At the same time, and over time, those who build their diet around fruits and tender green leaves eventually come to find that vegetables, as a group, digest much more slowly and consume much more energy in the process then do the nonstarchy fruits and greens. The human organism is not well designed to digest starches in large quantities. That is, our capacity to produce amylytic enzymes is modest, in contrast with that of other species that digest starches well. In addition, there is NO good food combination involving starches. Their presence causes reduced digestive efficiency of fruits, greens, and also of proteins and fats (e.g. nuts and seeds). Of course, I don't treat nuts and seeds is optimal or primary foods, either. So...occasionally I eat some nuts (rarely seeds, at this point). And occasionally I eat some carrot. But over time, I do so with decreasing frequency, simply because of the results I observe in myself. So I encourage you not to " give up " the foods that you love and that are working for you now. Instead, as you progress, just try some different approaches. (Of course, if you try something for three days, you won't likely " get it " .) Perhaps over time, you'll reach the same conclusions as I have. Oh darn ~ now I can't eat carrots, beets, turnips, etc??? I juice carrots every day and I've lost 11 1/2 pounds in under 2 1/2 weeks! What does starch do to the body that is bad?
