An excellent source on this is Ross Horne's book on the failure of the Pritikin diet, available for free download from the Soil and Health Library (www.soilandhealth.org). Animal foods also contribute heavily to formation of arthritic conditions. It's not about the starch, it's about the acid-forming components. Potatoes are not acid-forming to nearly the degree that most grains are. If you are going to eat a cooked starch and choose between potatoes and grains, I'd prefer that you choose potatoes 10 times out of 10. Of course, I'm not recommending either of these choices ... Does arthritis get better or at least stop the progression when grains are removed or at least consummed in small amounts? Potatoes are a starch. Are they as bad for you as the grains?
