Spiced Tomato & Lentil Soup with Guacamole Relish

 

 

A spicy, satisfying soup that truly nourishes and warms up a cold day - or serve

cold on a hot summer's day.

 

 

Soup:

 

6 teaspoons olive oil

2 onions, chopped

2 garlic cloves, crushed

2 teaspoons ground cumin

1 teaspoon paprika

200 g (7 oz) red lentils

3 teaspoons tomato puree

2 large tins chopped tomatoes

1 litre/quart vegetable stock -OR- water

 

Guacamole Relish:

 

2 avocados, peeled and chopped

1 small red chilli, seeded and chopped

fresh, chopped coriander (cilantro), to taste

juice of 1 lime

 

 

1. Make Guacamole Relish: Place all relish ingredients into the food processor

until well mixed but not pureed. Chill until ready to serve.

 

2. Heat the oil in a large pan. Add the onions and garlic, and cook gently until

soft.

 

3. Add the spices and cook for another minute.

 

4. Add the lentils and tomato puree, and stir until well mixed.

 

5. Add the chopped tomatoes and stock or water. Bring to the boil, cover, and

simmer until the lentils are cooked.

 

6. Allow to cool slightly, then place soup into food processor until liquidated.

 

7. Serve the soup, ladled into bowls, with a generous amount of the guacamole

relish.

 

 

Serves 6.
