Guest guest Report post Posted May 14, 2010 Classic Greek Salad 6 teaspoons olive oil 6 teaspoons lemon juice 1 garlic clove, crushed 8 teaspoons chopped fresh oregano leaves salt6 and pepper, to taste -OR- 1 1/2 teaspoons dried oregano 250 g (9 oz) cherry tomatoes, halved 1 large Lebanese (Mediterranean) cucumber, quartered lengthways, chopped 1 small red onion, chopped 1 small red capsicum (bell pepper), chopped 1/2 cup kalamata olives 100 g (3 1/2 oz) tofu feta (optional) 1. Place oil, lemon juice, garlic and oregano in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine. 2. Combine tomato, cucumber, onion, capsicum bell pepper) and olives in a large bowl. 3. Top with tofu feta. 4. Drizzle with oil mixture. Serve. Serves 4.
