It has a creamy pulp and delicate aroma and is native to Mexico and South America. 2 large dragon fruit, halved lengthwise 2 oranges 2 teaspoons finely shredded mint 4 teaspoons finely grated lemon zest 2 teaspoons finely grated lime zest 8 teaspoons slivered almonds, toasted 8 teaspoons shredded coconut, toasted 4 scoops vegan vanilla ice-cream, to serve 1. Carefully scoop flesh from dragon fruit, keeping skin intact to form a shell. Cut flesh into 2 cm (3/4 " ) pieces and place in a large bowl. 2. Peel and segment oranges over dragon fruit to catch orange juice. Add orange segments, mint and zest to dragon fruit in bowl. Toss gently to combine. 3. Spoon fruit mixture into shells. Place shells on plates. 4. Combine almond and coconut on a large plate. Gently roll ice-cream scoops into almond mixture to coat evenly. Place ice-cream on fruit. Serve at once.
