Quinoa Faux Gratin avec Champignons Saute a shallot in a couple of tablespoons of oil. Add 3 stalks of chopped celery, 2 tbsp dried oregano, and a bit of salt, and saute a bit longer (3 minutes or so). Add 1 cup of quinoa (rinsed VERY well if not pre-rinsed). Add a good splash of dry white wine (1/4 cup). When the wine is completely evaporated, add 2 cups of " chicken " broth (McCormick makes a good chicken-style bouillon cube). Let simmer until the quinoa is cooked. When quinoa has popped into little spirals, add 2 chopped green onions, 4 chopped garlic cloves and 4 cups of chopped mushrooms of different types. If there is not a bit of water left, add more. It should be pourable. Let the mushrooms get a bit soft, then add 2/3 cup nutritional yeast. Stir until the nutritional yeast is melted.
