While I also don't tolerate almonds I am able to manage filbert/hazelnut meal and unsweetened coconut ground to flour. There is a talented chef, Elana, who also can't eat grain and seed flours so she has created recipes for almond meal. I just substitute the filbert meal. Elena's recipes aren't all vegan so you have to select ones that are or use egg substitutes. http://www.elanaspantry.com/ She said she is experimenting with coconut flour so there will be some of those recipes coming soon. I grind the filberts to meal in a food processor and the unsweetened, flake coconut I do in a clean electric coffee grinder. I've come to eat lettuce wraps and stuffed celery a lot since most breads and crackers are out for me now. I thought I would mind but I really haven't. Hope this helps.
