Guest guest Posted March 11, 2010 Report Share Posted March 11, 2010 Potatoes with Lemon Thyme Salt 1.5 kg (3 lb 5 oz) sebago potatoes, peeled, cut into 5 cm (2 " ) pieces 8 teaspoons olive oil pepper, to taste 2 teaspoons sea salt flakes 4 teaspoon fresh lemon thyme leaves 1. Preheat oven to 220 C (430 F) fan-forced. 2. Place potato in a large, microwave-safe bowl. Add 8 teaspoons cold water. Cover loosely with plastic wrap. Microwave on HIGH (100%) for 5 minutes or until potato is just tender. Drain. Pat dry with paper towel. 3. Transfer potatoes to a roasting pan. Drizzle with oil. Toss to coat. Season with pepper. Roast for 45 minutes, turning halfway during cooking, or until browned and crisp. 4. Meanwhile, place salt and thyme in a bowl. Using the back of a spoon, crush mixture to combine.
