Guest guest Posted March 11, 2010 Report Share Posted March 11, 2010 Roasted Herb Potatoes 2.5 kg (5 1/2 lb) chat potatoes 1/4 cup olive oil 8 teaspoons fresh thyme leaves 8 teaspoons chopped fresh rosemary leaves 1. Preheat oven to 200 C (400 F). 2. Place potatoes in a large roasting dish. Drizzle with oil. Sprinkle with thyme and rosemary. Toss to coat. 3. Roast for 1 hour or until golden and tender. Serve. TIP: For speedier potatoes, first place in 2 saucepans. Cover with cold water. Bring to the boil over high heat. Boil, partially covered, for 10 minutes or until just tender.
