Guest guest Posted March 11, 2010 Report Share Posted March 11, 2010 Sauteed Beans & Asparagus with Garlic & Chive Butter 4 teaspoons olive oil 2 garlic cloves, thinly sliced 300 g (10 1/2 oz) fresh green beans, trimmed 3 bunches asparagus 50 g (1 3/4 oz) vegan margarine, chopped 8 teaspoons chopped fresh chives salt & pepper, to taste 1. Heat oil in a large frying pan over medium heat. Add garlic. Cook for 1 minute or until just softened (do not brown). 2. Add beans. Cook for 3 to 5 minutes or until beans start to turn bright green. Transfer beans and garlic to a bowl. 3. Add asparagus to pan. Cook for 2 to 3 minutes or until asparagus starts to turn bright green. 4. Reduce heat to low. Return beans and garlic to pan.
