Guest guest Posted March 11, 2010 Report Share Posted March 11, 2010 Chunky Maple Relish 4 teaspoons vegetable oil 1 small red onion, halved, thinly sliced 1 teaspoon mustard seeds 1 garlic clove, crushed 1/4 cup maple syrup 1/4 cup currants 250 g (9 oz) cherry tomatoes, halved 1. Heat the oil in a saucepan over medium-high heat. Cook red onion, stirring, for 5 minutes or until softened. 2. Add the mustard seeds and the garlic. Cook, stirring, for 1 minute. 3. Stir in maple syrup, currants and tomato. Bring to the boil. Reduce heat to low. Simmer, uncovered, for 5 minutes or until thickened. Cool. SERVING SUGGESTION: Serve on burgers. Serves 4.
