Guest guest Posted March 9, 2010 Report Share Posted March 9, 2010 Walnut Coleslaw 1 cup plain soy yoghurt 4 teaspoons dijon mustard 1/3 cup cold water 1/2 small green cabbage, finely shredded 1/2 small red cabbage, finely shredded 2 granny smith apples, unpeeled, cored, cut into matchsticks 1 small red onion, halved, thinly sliced salt & pepper, to taste 3/4 cup roughly chopped walnuts 1. Combine yoghurt, mustard and cold water in a bowl. Season with salt and pepper. 2. Place cabbage, apple and red onion in a large bowl. Add yoghurt mixture. Toss to coat. 3. Sprinkle with walnuts.
