Guest guest Posted February 5, 2010 Report Share Posted February 5, 2010 Spiced Tomato & Lantil Soup with Guacamole Relish Soup: 2 tbsp (6 tsp) olive oil 2 onions, chopped 2 garlic cloves, crushed 2 tsp cumin 1 tsp paprika 200 g (7 oz) red lentils 1 tbsp (3 tsp) tomato puree 2 large tins chopped tomatoes 1 litre/quart vegetable stock -OR- water salt and pepper, to taste Guacamole Relish: 2 avocados, peeled & chopped 1 small red chilli, seeded & chopped fresh coriander (cilantro), chopped, to taste juice of 1 lime Soup: 1. Heat the oil in a large pan. Add the onions and garlic and cook gently until soft. 2. Add the spices and cook for another minute. 3. Add the lentils and tomato puree, and stir until well mixed. 4. Add the chopped tomatoes and stock or water. Bring to the boil; cover; simmer until the lentils are cooked. 5. Allow to cool slightly, then place soup into a blender or food processor and blend until liquidised. 6. Season to taste. 7. Make Guacamole Relish: Place all ingredients into a blender or food processor and blend until well mixed, but not a smooth puree. 8.
