Puffed Amaranth

Hi All

 

I have a recipe that calls for puffed amaranth and I can't find it in any of the

local health food stores.  Does anyone know where I can buy it?  Or has anyone

actually tried " puffing " their own?  I found something that showed how to do it

and it looked so easy but I just burned mine.  I would appreciate any

suggestions.

Hi Jen,

 

You need to dry toast it. Your pot needs to be hot first before you add the

amaranth - only 1 to 2 Tbsp at a time. Let it pop until the popping slows down.

Dump it into a bowl and start over by reheating the pan. If the heat is too

high, you will start to scorch your amaranth so you may just have to try a lower

setting on your stove (I use no more than medium heat).
