Guest guest Posted January 31, 2010 Report Share Posted January 31, 2010 I thought I'd tell you all how it went. I tried a few times, so it took a while. I didn't want us to be eating brownies every day. :-) I started off with the " no butter " directions from the Betty Crocker website, which called for * 1/3 Cup Vegetable Oil * 2 Eggs  So, I used 1/3 cup safflower oil + 1/2 cup baby food prunes + 2 tsp baking powder (1/4 c prunes + 1 tsp baking powder for each egg). The brownies smelled and tasted fine. However, they were oily like you wouldn't believe. When I pushed gently on the surface of the brownies after they cooled off, they just oozed oil. I thought I must've measured wrong, so I tried again. Same result. Yucky. Next time, I used 1/4 cup safflower oil + 1/2 cup baby food peaches or apples (it was what I had on hand) + 2 tsp baking powder. They were no longer super oily. But this version, like the first, didn't rise at all. They came out flatter than I would've expected, but they tasted fine. Both versions were pretty sweet but not nauseatingly(?) so. By the time I was going to make a 3rd go of it with flax goo to replace the eggs (I figure adding pureed fruit was only adding to the sugary taste), my daughter had outgrown her allergy to eggs. Also, I was finally able to find some of the Spectrum dairy-free & soy-free margarine in town. So the 3rd time I made the brownies according to the instructions on the box (except for substituting the Spectrum for the butter). They were excellent. However, that doesn't work for anyone who is vegan. If I were to make them again and make them vegan, I'd try the Spectrum margarine and flax goo. Even when making them according to the package instructions, they were flatter than I remember regular brownies being. But they were so satisfying, though!! ________________________________ Jae <recyclednew Tue, December 29, 2009 8:46:57 PM RE: egg replacement for brownie mix?  I made them a while back using baby squash and unfortunately they ended up in the trash! I had success making cupcakes with both the yellow & the devil food mixes. I used 1 square container of gerber baby squash for the eggs. Even the gluten eaters loved the cupcakes! The only brownie mix I've had success with is Bob's Red Mill, which has corn in it. If corn isn't an issue for you, BRM is the way to go for brownies! Good luck! I picked up a box of Betty Crocker Gluten-Free brownie mix as a treat. Would the Ener-G egg replacer work ok or should I try something else? I've heard that baby food can sometimes substitute for eggs. If so, how much and what kind should I use for each egg?  I also have some ground flax seeds on hand. Not sure how to use that, either. Has anyone else tried this product and made it dairy and egg free? If so, what did you use, and how did it turn out?
